JAGGERY COOKERY Introduction Jaggery is a concentrated product of a cane juice and can vary from golden brown to dark brown in colour. It contains upto % sucrose, % invert sugars and % moisture. It is used to make several indian deserts.It is a substitute for sugar. Aim: To prepare a sugar based recepe. Sweet Paniyaram Ingredients: Raw rice - cup Urad dal - tbsp Jaggery - + ¼ cup (grated or powdered) Banana - (small one) Green Cardamom - (powdered) Finely chopped Coconut - tbsp Ghee - for frying Nutrition - - Nutrition and Dietetics Pactical Method . Clean and soak rice with urad dal for hours. Now grind it to a smooth batter. . Leave it outside for - hours for fermentation. Just before making appams, add jaggery,banana,greated coconut to the batter. . Now heat the paniyaram pan add tsp ghee to each partition. . Pour the batter in each partition and cook it on low flame. . Cook for few minutes and then turn it with a stick to cook the other side till it turns to golden brown.and serve hot Conclusion Sweet paniyaram is a delecious evening snack.
