They should have thorough knowledge of the ways of serving the food. Support Service Departments A hotel has other departments which provide support and are involved in the overall management and efficient functioning of the hotel.

These departments which may also be referred to as ‘back office’ departments are: Finance and Accounts, Engineering, Human Resources department, Sales and Marketing departments. Thus, a hotel has various departments having complex relationships amongst them. The smooth functioning of the organisation requires efficient management of man, material and other resources. Management Functions The management functions are planning, organising, co-ordinating, staffing, directing, controlling and evaluating the use of resources in light of the goals of the institution.

Each of these functions have been briefly discussed in the chapter on Catering Management.
